Are
you headed to watch the game this Sunday? Do you want to take something that is
healthy to share and you can eat so you don’t succumb to the cheese and salami
plate? Here are two chili recipes that I love.
Black Bean Chili – This may be the only recipe I have EVER
made from scratch, it reminds me of a similar chili from a favorite place in
North Carolina.
Ingredient
list:
2 cans
black beans, drained
1 can
diced tomatoes, with green chiles and cilantro (mild or hot depending on how
you like your chili)
½
green pepper, chopped
½ red
pepper, chopped
½ red
onion, chopped
2-4
cloves of garlic, chopped
Turkey
Kielbasa sausage, sliced thin and browned
½
bunch cilantro, chopped
½ T
chili powder
1 tsp
cumin powder
Can
add some cayenne powder or red pepper flakes to spice it up a bit, if you like

Brown
the turkey Kielbasa in a skillet, I like to make mine extra crispy, some would
call burnt, but I think it gives it a great taste. May need to add a few
tablespoons of olive oil to skillet.

Sauté
the onion, garlic, peppers in 1T of olive oil or coconut oil, until soft

Combine
the above with the cans of black beans and tomatoes.
4.
Simmer
on stove top for 15-20min.
5.
Ready
to serve.

I like
to serve mine with avocado, cheese and blue corn chips.
Sweet Potato Turkey Chili with Cinnamon – This is a Skinnytaste recipe that is
modified by my good friend Erin Young at www.erinyoungfitness.com (I second her addition of the
cinnamon!)
Ingredients:
1 lb
lean ground turkey
½ cup sweet onion, chopped
2 cloves garlic, chopped
10 oz can Rotel tomatoes with green chilies
14 oz can no salt added diced tomatoes
1 cup of any kind of marinara sauce or plain tomato sauce
½ cup sweet onion, chopped

¾ cup
water
½ tsp cumin
¼ tsp chili powder
¼ tsp paprika
½ tsp of cinnamon
1 bay leaf
2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
½ tsp cumin
¼ tsp chili powder
¼ tsp paprika
½ tsp of cinnamon
1 bay leaf
2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
Instructions:

Add
the onion and garlic and cook for 3 more minutes over medium heat.

Then,
add the rest: Rotel tomatoes, diced tomatoes, sweet potatoes, tomato/marinara
sauce, water, cumin, chili powder, paprika, cinnamon, and bay leaf.

Cover
and simmer over low heat until potatoes are soft and tender, about 25 minutes
stirring occasionally. Remove bay leaf and serve.

I
