If Luke had a theme song, this would be it. When we got married for the first 10 years of our marriage, he would make the Nestle Toll House Cookie recipe on the bag of chocolate chips every week and could EAT THE WHOLE BATCH! (Of course I would have some too, but if I didn't, he would consume them all!) And he remained thin, because men can do that when they are young, only if that was the case with women, right?
So when he found out about his high cholesterol and we decided to cut out white sugar, that meant no more Nestle Toll House Cookies. For the past year, (I am not kidding you when I say this) Luke has been searching and experimenting with healthy cookie recipes. He has modified, and modified and modified! And now I can finally share with you, the FINAL PRODUCT!
Heart Healthy Almond Chocolate Oat Cookies - no eggs, no dairy, no sugar, gluten free

Makes 2 dozen
Ingredients:
2 cups almonds, lightly salted
3 TBS olive oil
1/2 cup water
1/4 cup honey
1/4 cup sorghum molasses
1 tsp vanilla
2 cups almond flour
1 tsp baking soda
1 tsp cinnamon
3/4 cup dark chocolate chips (no dairy added) or you can use semi-sweet if you prefer (but that contains dairy)
1-1/2 cups oats (gluten free)
Instructions:
1. Preheat oven 350 F.
2. Place almonds in food processor and blend. Add the 3 TBS of olive oil and blend, making almond butter.
3. Meanwhile, in a small saucepan on the stove, combine water, honey and molasses, stir over high heat until it just starts to boil, then remove from the heat and cool.
4. Once cooled, add this to the almond mixture and stir until blended.
5. Add vanilla and stir. In separate bowl combine almond flour, baking soda and cinnamon and then add to the wet ingredients.
6. Then add the chocolate chips and stir, then add the oats and stir.
7. Spoon on non-greased cookie sheet. Bake at 350 F for 8 minutes.
