To be honest from the start, I want to tell you that I wish
eating healthy required less time and that organics were cheap. While I am
laying everything out there, I also wish sugar was good for me. I am not
perfect. I try to live by the 90/10 concept – eat well 90% of the time and
splurge on the other 10%. I probably live closer to the 80/20, but that’s life
and one I can continue to hold as a lifestyle and not just a diet or fad.
I want to encourage you in planning today when it comes to what you eat. I have tried many techniques on how to make it easier to eat healthier and on weeknights I thank myself if I have made a plan on Sunday! This week I went to Costco on Saturday and got my loot of veggies. I do my best to buy all organic (I have the dirty/clean list on my phone), but I am not going to drag myself to every store in Indy to make sure I have all organics in my fridge. I got Brussel sprouts, red peppers, already cut butternut squash (I am happy to pay extra to not have to work at cutting up one of those things every week!), French green beans, blueberries (my kids are going to turn into Violet Beauregarde from Charlie and Chocolate Factory due to how many they eat) and my single servings of hummus and guacamole. So on Sunday I washed and cut all my veggies and fruit to be “eating ready.” Since my family cannot possible eat all those green beans or Brussel sprouts in one week, I packaged them up into smaller family sized freezer bags for the following weeks ahead. Luke also whipped up some yummy rub for the pork loins and pre-rubbed them and froze a few and put the others in the crockpot for our weeknight dinners.
And I overcook for dinner, so I have lunch for the next day
at work. I have my package of red peppers, sliced on Sunday, my single serving
hummus and my Tupperware of leftovers that I throw in my bag as I walk out the
door to work. NEVER do I forget to blend my Shakeology to drink on the way into
work. My lifesaver, my drug, we can talk more on that later, but don’t talk to
me or want me to do surgery on your dog without my Shakeology!
Will I ever be happy about the amount of planning? Probably
not, but I try and remind myself how easy I make weeknights if I just plan on
the weekends!
